Ingredients

  • 500g ground beef
  • 8 small flour or corn tortillas
  • 1 packet taco seasoning (or 1 tsp each: cumin, chili powder, garlic powder, paprika)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 2 tomatoes, diced
  • 1 avocado, sliced
  • Sour cream and salsa for serving
  • Salt to taste

Steps

  1. Heat a skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned.
  2. Drain excess fat from the skillet.
  3. Add taco seasoning and 1/4 cup of water to the beef. Stir and simmer for 3–5 minutes until the sauce thickens.
  4. Warm the tortillas in a dry pan or microwave.
  5. Assemble the tacos: place beef on each tortilla, then top with lettuce, tomato, cheese, and avocado.
  6. Serve with sour cream and salsa on the side.

Ingredients

  • 400g spaghetti
  • 200g pancetta or bacon, diced
  • 4 large eggs
  • 100g grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1 cup of pasta water before draining.
  2. In a bowl, whisk together eggs and grated Parmesan. Set aside.
  3. In a large skillet over medium heat, cook pancetta until crispy. Add garlic and cook for 1 more minute.
  4. Remove the skillet from heat. Add the drained spaghetti and toss to coat with the pancetta fat.
  5. Pour the egg and cheese mixture over the pasta, tossing quickly. Add pasta water a little at a time until the sauce is creamy.
  6. Season with salt and plenty of black pepper. Garnish with parsley and serve immediately.

Steps
